Italian Style Turkey Meat Balls

Total Cooking Time: 50 minutes. If you are trying to cut down on consumption of red meat, this is a good alternative.  Two  turkey meat balls of 1.5 inches in diameter will pack a good source of protein.   Adjust your sodium levels by reducing the sea salt or soy sauce amount.

MAKES 4 SERVINGS 8 TO 10 (1.5 inch diameter meat balls)

  • 16oz Ground Turkey Lean
  • 4oz Bell Peppers (3/4 cup)
  • 4oz White Mushrooms (1cup)
  • 4oz Onions (1cup)
  • 1 slice Wheat Bread (end)
  • 2 Tbsp Soy Sauce Lite Sodium
  • 2 Tbsp Ketchup
  • Italian Herb Seasoning to taste
  • Sea Salt to taste
  • Black Pepper to taste
  • EV Olive Oil

Preheat oven to 420 Degrees. 

Chop up Bell Peppers, Onions, Mushrooms and tear bread to crumbs.  Everything should be chopped to semi-fine.

Combine everything above together with Ground Turkey. Add soy sauce, ketchup, sea salt, pepper, and Italian Seasoning in two to three stages of the combining process.  Create balls of 1 1/2 inch size to 2 inches.

Place each ball apart on a tray prepped with Olive Oil. Bake at 420 degrees for 22 minutes.  At 11 minutes, turn each ball over, bake for remaining 10 minutes.
