Chicken Breast, Zuccinni, Rice

4 servings

  • 16 oz chicken breasts
  • 10 oz Zucchini 
  • Rice
  • Cayenne
  • Sea Salt, black pepper, EVO

Preheat oven to 450 degrees. Lightly coat chicken with olive oil, add sprinkles of sea salt and cayenne pepper.  Slice Zucchini into 1 inch length strips. Coat zucchini with olive oil and season with pepper.  Bake chicken for 16 minutes until center is moist and fully cooked. Bake zucchini  along with chicken. Times may vary based on thickness of chicken. Serve with rice.

Italian Style Turkey Meat Balls

SEE AS FEATURED RECIPE. Total Cooking Time: 50 minutes. If you are trying to cut down on consumption of red meat, this is a good alternative.  Two  turkey meat balls of 1.5 inches in diameter will pack a good source of protein.   Adjust your sodium levels by reducing the sea salt or soy sauce amount.

MAKES 4 SERVINGS 8 TO 10 (1.5 inch diameter meat balls)

  • 16oz Ground Turkey Lean
  • 4oz Bell Peppers (3/4 cup)
  • 4oz White Mushrooms (1cup)
  • 4oz Onions (1cup)
  • 1 slice Wheat Bread (end)
  • 2 Tbsp Soy Sauce Lite Sodium
  • 2 Tbsp Ketchup
  • Italian Herb Seasoning to taste
  • Sea Salt to taste
  • Black Pepper to taste
  • EV Olive Oil

Preheat oven to 420 Degrees.  Chop up Bell Peppers, Onions, Mushrooms and tear bread to crumbs.  Everything should be chopped to semi-fine.  Combine everything above together with Ground Turkey. Add soy sauce, ketchup, sea salt, pepper, and Italian Seasoning in two to three stages of the combining process.  Create balls of 1 1/2 inch size to 2 inches. Place each ball apart on a tray prepped with Olive Oil. Bake at 420 degrees for 22 minutes.  At 11 minutes, turn each ball over, bake for remaining 10 minutes.

Turkey Sourdough Cheese Burger

  • 1 serving
  • 6 oz. Ground Turkey lean
  • 4 oz Crimini Mushrooms
  • 1 slice of Colby jack cheese
  • 2 slices of Sourdough bread
  • 1 oz chopped onions
  • 1 Tbsp Ketchup
  • 1 Tbsp Light Mayo
  • EVO, salt and pepper

In pan, fry onions and mushrooms until sauteed.  Remove from pan. Add ground turkey pattie to pan. Flip pattie over after 2 minutes.  When turkey pattie is nearly cooked, add salt, pepper and Colby jack cheese. Toast sourdough in toaster or oven.  Spread ketchup and light mayo on each slice. Add onions and mushrooms onto slice followed by the turkey pattie.

Turkey Patty, Turkey Bacon Mushroom Burger

  • 1 serving
  • 6 oz. Ground Turkey lean
  • 2 slices Turkey Bacon
  • 4 oz Crimini Mushrooms
  • 1 slice of  cheese
  • 2 slices of bread
  • 1 oz chopped onions
  • 1 Tbsp Ketchup
  • 1 Tbsp Light Mayo
  • EVO, salt and pepper

In pan, fry onions and mushrooms until sauteed.  Remove from pan. Add ground turkey pattie to pan and Turkey Bacon. Flip pattie over after 2 minutes.  When turkey pattie is nearly cooked, add salt, pepper and cheese. Remove turkey bacon when crisp on both sides. Toast bread in toaster or oven.  Spread ketchup and light mayo on each slice. Add onions and mushrooms onto slice followed by the turkey pattie.
