Baked Salmon, Sweet Potatoes and Veggies

2 Servings

  • Atlantic Salmon 8oz
  • 2 cups Broccoli-Cauliflower Combo
  • 2 cup diced cubed sweet potatoes
  • 1 cup sliced Bell Peppers
  • 1/2 cup rice (brown or white)
  • Olive Oil, or Coconut oil for crispy veggies
  • Salt and Pepper

Preheat Oven to 420 degrees.  Prep Salmon Filets by brushing EVO on both sides.  Add salt and pepper accordingly.  Place Salmon on non-stick or sprayed tray.   Slice Sweet Potatoes into 1 inch cubes. Remove skin if preferred. Place Sweet Potatoes Broccoli, Cauliflower and Sliced Peppers on separate tray.  Light coat with Coconut oil or EVO add salt and pepper.

You can bake both items simulateously however Salmon (8oz) will cook within 18 minutes at 420 degrees. Remove when fully cooked.  Cover with foil for 5 minutes to lock in juices.  Veggies and Sweet Potatoes may take approximately 22 minutes.  Remove from oven and prepare with rice.

  • Sword Fish
  • Shrimp
  • Asparagus
  • Bell Peppers
  • Mushrooms
  • Olive Oil
  • Salt Pepper

Tilapia, Mushrooms and Broccoli (onions)

  • 2 Servings
  •  8 oz Tilapia
  • 1 cup white mushrooms
  • 1 cup broccoli
  • 1/3 onion
  • Himilayan Sea Salt.
  • Pepper
  • EVO

Preheat oven to 400 degrees.  Prep Tilapia with lightly brushed both sides of filets EVO, salt and pepper. Place on oven platter apart. Slice onions and place mushrooms, broccoli and onions  seasoned on separate tray or foil.  Place both trays in oven.  Tilapia cooks in 12 to 18 minutes.  Veggies 22 minutes. 

Prepare with rice if preferred.
